I made this Crunchy Veg Bowl
This recipe is from Bon Appetit. It has an intimidatingly long list of ingredients but it not hard to make. Also, it calls for a blender to make the sauce. Screw that. A whisk works fine and it's way easier to clean. I have to tell you, some of these ingredients threw me but I went with it. Golden beets and bean sprouts would not be what I would choose. I still feel that way about the bean sprouts (they are totally unnecessary) but the matchstick golden beets were a pleasant surprise. You got me golden beets. I'm in. You could basically use any firm veg you can chop into sticks. Radishes...jicama....Go nuts. Oh yea, and there's nuts. Any kind of peanuts are fine. Don't be fussy.
PS at the end of the day, if you're lazy an over medium fried egg works just as well as poached.
